Welcome Decorators,
Today I will be speaking on fear, sloppiness and laziness. I am an instructor for cake decorating and today as one of my classes was ending, I overheard a conversation between two decorators, It dawned on me that I should immediately write this to all of you.
When you walk into a class you should be serious and ready to go. Simple, the fact of the matter is we (pretty much) are all afraid, we don't know how our cakes will turn out, we don't know what color to choose, how high they should be and so forth. That's why I am here, to help you with that and much more, but you must want and be willing and to do it!!!! In this industry of food, whether it's a passion for gourmet cooking or a passion for cake decorating YOU CANT BE SLOPPY!!!!. You must have your equipment at all times and you must be prepared to work. It will not do it for you automatically, get serious. You may say you're serious but if the instructor sees laziness or sloppiness in your work he (or she) will simply not put in the time with you that you would like, most likely, they will be very brief with you at all times. Example: At the end of my courses, each decorator is required to bring in a finale cake using their own ideas with techniques they have learned throughout their training, but Just lately, within the past few months I am getting a lot of "Oh I'm just gonna bring in this" or "I'm just gonna bring in that" in other words, I simply wont be trying. Why in the hell would you pay for a class like this, or any for that matter, and not do your grand best? It's shameful. Your work should be stunning and jaw dropping. One of my adviser's told me something a long time ago, and I quote "How do you expect someone to invest in you if you can't even invest in yourself"? pretty much says it all right there. Even if you are just doing it for family or fun, how can you possibly brag about going to school if you work isn't showing it. You will surely look sad at the party.
So to sum it all up, pull the out stick , pick up your balls and start doing what you love best, you can this. There is no room in this business for fear, sloppiness & laziness.
